To make the dough

  •  1 Cup All-Purpose Maida Flour
  • 12 Cup Wheat Flour

  • 1. Tsp Carom the Seeds of Ajwain
  •  3 Tbsp Ghee

  • 1 Tsp Coriander Seeds
  • 1 Tbsp Cumin Seeds
  • 1 Tsp Fennel Seeds
  • 2 Tbsp oil
  • 1. Tsp Green Chilli
  •  1/4th Cup Peas
  •  1. Tsp Turmeric Powder
  • 1 Tsp Red Chilli Powder
  • 1 Tsp Coriander Powder
  • 1. Tsp Amchur Powder
  •  Salt to taste
  •  Black Salt
  • 1 Cup of Boiled and Mashed Potato
  • 2 Tbsp Coriander leaves
  • Oil to fry

    Punjabi Samosa Recipe
    Samosa Dough

  • A mixing bowl, add an all-purpose mix of flour carom seeds and salt.

  • Mix thoroughly. Rub between your palms to create the breadcrumbs-like
    consistency. If it isn't binding then add additional ghee or oil.

  • By taking a small amount of water at a given time, work into an elastic
    dough.

  • Wrap the dough in a moist towel and allow it to rest for 30 to 40 minutes.
    Make the aloo stuffing

  • Roast cumin seeds, dry coriander seeds, and fennel seeds.

  •  Transfer to a mortar. Let it cool, then coarsely grind it.

  • In a pan, heat oil with some green chilli at a low heat.

  • Add frozen or boiled green peas.

  • Add the turmeric powder as well as red chilli powder coriander powder,

    Dry mango (amchur) powder as well as black salt, and salt according to
